Flowers for menu
Our visitors will see the kitchen where our floral delights are home-prepared. They are sold in our boutique, opened year round.
Picking:
At Fleurs et Délices we pick the flowers by hand in early morning after the dew has evaporated or at the end of the day when it is cooler. We choose only the ones at their peak of perfection. After picking, they are gently washed and refrigerated. Than, according to the flower variety we decide the preserving method.
Preserving flowers:
The preserving methods we use are: refrigeration, freezing, drying and candying. We refrigerate the ones sold fresh for flower salad for instance and the daylily buds soon becoming daylily dillies.
We dry the latter for herbal teas, herbal vinegar, and flower sugar.
Those preserved to make flower jellies or marmalades are frozen.
Quite a few flowers are crystallized, becoming “fleurises.”
Preparation:
Fresh: add them to butter, dip, or yogurt. Fill them, or fry them. Our flower mix is a mixture of color, texture, and flavour. You may use it also as a salad mix base with other greens.

As soon as the flowers are cleaned, they are damped in syrup, drained, and then dusted with sugar. This is repeated a few times before they are dried.
When well dried, they are nice and crispy and can be conserved up to a year at room temperature. Low calories and 100% vegetable, they enhance all desserts. They add an elegant touch to special occasion cakes or may be offered in
wedding candy boxes.
Jellies, marmalades, and condiments are produced with high quality ingredients, slowly simmered in small quantities without preserving agents, food colouring, or artificial additives.
